Dad and Mom showed us a recipe for "good Creole donuts." They both don't know how to spell it but Dad said the Louisiana French dictionary should have it. The dictionary has three different spellings for it and I included one in the title. The second spelling comes from Prairie Femme in her transcribing a recording of Mom and Dad talking about Mardi Gras. Dad told Denise how his parents would serve these doughnuts to the Mardi Gras when they passed. That and some wine. But they had to show their faces first. One time a man refused to unmask, rudely saying he wasn't from around there and they didn't need to know or see his face. Later that night he fought and killed another man.
Mom said she'll make some one day before we stop by. I asked her why they they always made them look like triangles. Both Dad and Mom didn't know. I'm guessing maybe it's just a tradition. The doughnut is not like the New Orleans style beignets. Similar but not as fancy as en Ville.
