Denise will make "New Orleans" po-boys with this sausage from Champagnes. I was surprised to see that because I associate syrup in sausage as a Delcambre thing. But we'll have it all. The smoked meat tradition of the Northern prairie, good, good stuff from Abbeville (Steen's), Delcambre style sausage and the great New Orleans style food. Not bad for a cooking in Eunice.
