oeufs (eggs) in gumbo
Bonjour! Comment ca va? My girlfriend made a gumbo the other day and we talked about the many different ways that people cook it. She cooked a poule (hen) and saucisse (sausage) gumbo. I mentioned to her about eggs and she was familiar with it. She puts a toothpick at each end to make a hole. This enables the juices to run through, which supposedly puts more flavors into the egg. It sounded like a good idea. Many people simply crack several eggs and drop them in. My family, I believe, boils eggs to the side and then places them into the gumbo. I'm not sure if they poke holes in them before they drop them in. I'll have to call and see. They might try that if they don't and be surprised; they were when they put yellow mustard in their bowl for a nouveau topping. They told me il est bon like ca.
